One of the most appealing delicacies that travelers just cannot miss when they are here is the fermented fish hot pot in the U Minh district of Ca Mau province, Vietnam.

Freshwater fish that has been fermented, particularly fermented snakeskin gourami, is the major component in U Minh’s fermented fish hot pot. The chef will simmer fresh coconut water with fermented fish in the hot pot to savor its subtle sweetness. Along with a range of supplemental ingredients including freshwater fish, belly pork, squid, shrimp, etc., raw vegetables dipped in hot pot are necessary.

The U Minh’s fermented fish hot pot is served with a variety of vegetables, including Egyptian rattlepod, banana cabbage, water spinach, rice paddy herb, green mustard, straw mushrooms, green eggplant, and vegetable hummingbird, among others.

Once they’ve tried it, practically everyone will always remember the rich flavor of the fermented fish hot pot and the people of U Minh, despite the fact that many foodies may initially be a little apprehensive of the dish’s stink.
